Never never land



Recently I've tried lots of new recipes and made a bunch of fun things. Sadly for you however, I did not know I'd be starting this blog, so I didn't take any pictures of the meal during the process or when complete. But never fear, I figured I would at least keep you up to date on some of the recent goings-on in my kitchen.

Arugula pesto - I wanted to make pesto and had tons of arugula leftover, so I tried this. It was good, but nowhere near as good as regular/basil pesto in my opinion.

Bacon potatoes - I used Giada's recipe that I saw on the Food Network, but instead of using half bacon half pancetta, I used all bacon. Because clearly I do not have pancetta lying around the house, but I have tons of bacon. This was really delicious, but tasted a little too breakfasty for dinner in my opinion.

Browned butter blueberry muffins - As this recipe promises, these were the best blueberry muffins I have ever had.

Caesar Salad - My aunt and uncle's amazing recipe. I will definitely post on this later.

Balsamic brown butter tilapia
- This was really easy and pretty delicious, but the sauce turned out pretty syrupy and perhaps a little too buttery (is that possible??).

Chocolate sheet cake
- This sucker required almost four sticks of butter, so you would think it would be amazing. Well, maybe it was my fault, but it really didn't come out as good as I expected. The cake was a little dry and not chocolatey enough, especially compared to the rich frosting. I still haven't mastered or even apprenticed cakes yet.

  1. If you use some baking chocolate squares instead of cocoa powder, it will have a richer chocolate taste. (cocoa butter accounts for the difference; this may allow you to skimp on the butter measurement a little) I find most dessert recipes are better if you leave out the salt and use unsalted butter.
    If you have the patience to dissolve sugar, regular sugar does not have the bitter aftertaste that some people taste with confectioner's sugar.

  2. Thanks for the tips! I actually have plenty of baking chocolate squares in our pantry, so I will have to try those next time. I also never knew you could dissolve sugar in place of confectioner's sugar.

    I'm sure even using your methods I will never be able to bake cakes as well as you can!!

  3. Sandy's cakes ARE the world's best but someone's got to be runner-up and it could be you, Mrs. Foodiebia! My mom used to bake us an orange chiffon cake for our birthdays that was wonderful.
