Crispy Halibut

 
John and I love seafood, though I'm still in the process of learning to cook it well.  Seafood is easy to mess up, in my opinion.  And bad seafood is just gross.  Beyond gross, really.  Halibut is John's favorite, so we try to grab it at the farmers market when we see it there.  It must be halibut season because it's been there the past few weeks.  I've got a happy hubby on my hands.  This recipe is super easy and yields those delicious crispy tops you usually only find at restaurants.  Now I just need to master a rich sauce to go with it and we'll never have to eat at a restaurant again!

  
Panko is the secret to all things delicious.  You can grab a handful and pulse it in the food processor to a fine powder...

  
Or use a plastic bag and a rolling pin or mortar, like I did.  We are not big fans of cleaning the food processor in my house. 

  
Here are our pretty halibut steaks.  No, we didn't have a guest at dunner.  We just had a lot of fish!

  
In one shallow bowl place your powdery panko and in the other place a thin layer of milk.  Salt and pepper the halibut and then dip in the milk and then dip each side in panko.

  
Heat canola oil in a skillet over medium-high heat.

  
When the oil is hot, place the halibut evenly in the pan.  Fry on the first side for 5 minutes, until browned.

  
Flip and cook for 4-5 minutes on the next side until browned and fully cooked.

  
All done, crispy, and delicious.  I would recommend eating this with a drizzle of melted butter, any sauce of your choice, or perhaps a squirt of lemon if you want to be all healthy about it.  I will probably cook mine a bit less next time because mine got a tad dried out.  The crispy top was delicious though.

Crispy Halibut

2 halibut steaks
1/4 cup panko breadcrumbs
1/8 cup milk
Kosher salt
Fresh pepper
Canola oil

In either a food processor or plastic bag (with a rolling pin), turn your panko breadcrumbs into a fine powder.  Place in a shallow bowl.  Salt and pepper halibut steaks.  Heat enough canola oil to cover the bottom of your plan on medium high heat.  Place milk in shallow bowl and dip halibut in milk and then panko on both sides.  Place halibut steaks evenly in pan.  Cook 6 minutes until golden brown and then flip and cook 4-5 minutes until browned and fully cooked.  Enjoy with melted butter.
